Ingredients
Raisins 3 lb
Rice 5 lb
Sugar 10 lb
Citric acid 2 tablespoons
Yeast and nutrient 2 ozs
Water 3 gallons
Recipe
Dissolve sugar in some of the water, allow to cool, pour over rice and raisins.
Add acid and rest of water & yeast.
Stir daily for 21 days, sieve into demi johns.
Ferment out. Ready for drinking STRAIGHT AWAY
If not drunk within 2 months add one campden tablet per gallon and leave for 9 months.
Pulp can be used to make a lighter wine.
