Malaysian Chicken Skewers


Malaysian Satay Marinade

3 Tbspns ground turmeric
½ Tbspn ground cumin
2 Tspns coarse salt
3 Tbspns brown sugar
1 thumb sized chunk of lemongrass (the fleshy end - cut into rounds)
1 kg chicken chunks plus sufficient skewers (approx 30 wooden ones soaked in water)

Blitz together with a stick blender and marinade chicken chunks for at least 30 minutes but preferably overnight. When ready to cook, thread onto skewers & BBQ using the brushing oil below

Brushing Oil:

100ml Vegetable oil
50ml coconut milk
1 large lightly bashed lemon grass for basting
1 Tbspn brown sugar

Blitz together with a stick blender.

Serve with a Peanut sauce, cucumber strips and quick pickled red onions.

In terms of the Peanut sauce - I generally fry off a finely chopped onion with some finely sliced red chilli (to taste). Add a little cumin pepper (I like some heat), then add a few tablespoons of crunchy peanut butter, lime juice & some veg stock. Let the flavours come together and let the sauce thicken up a bit. Add water if it gets too thick. Finish the sauce off with freshly toasted and crushed peanuts, thinly sliced spring onion and some finely chopped fresh coriander (optional). Ingredient quantities are pretty much on a tase and add basis.

Yeah. Just click the recipe button top right and add tags. They don’t make sense for everything but it just allows everyone to search quickly for stuff.
