The boy wants to make paneer curry. He's quite adamant he he can find a recipe by asking google. I thought here would be a better bet. (It's the paneer we require help with rather than curry per se)

If I have any milk that is on the turn, I make cottage cheese the same way but don't squash it, so just a more compacted form of cottage cheese.

try the maths on sheep cheese

i got it down to 300 sheep to milk and do dairy stuff from for a chance at a decent wage for one person who would need to work at least 36 hrs a day 7 days a week.

how folk do it small scale with a bit of spare milk is one thing, small commercial almost impossible and big commercial would be a nightmare to establish from scratch

and sheep are horrible in many interesting and unusual ways.

i would rather wrestle a steer for a replacement ear tag or dodge a worried moomum than give a sheep it's meds or a haircut

ovinotechnophobia is not an illness it is a wise choice.

and the woolly monsters hate me even if they have never met me.

if i had to be a sheepkeeper, they would be wild and i would harvest them with a deer rifle and a wheel barrow

once they are dead they are really nice.

it's on my to do list. but the next spare milk is going to make more yogurt and then labneh .. unless i need the yogurt by then.
only half my last milk delivery came this week though, so being cautious... milk in my coffee is a priority ...

paneer looks really easy. I was going to go with this

I've made it using the joy of cooking recipe. Quite easy and tasty

Curry now made - Paneer butter masala! And it was very good! Very impressed with the way the paneer came out!

Used the BBCFood recipe which jema linked to. Keeping it in the fridge overnight firmed it up a lot if you want it to stay in chunks.
