They're keen on their algues in Brittany. There's a rather splendid Musee des Algues in Lanildut if you're ever over that way.
Seems a good idea to use them, they grow at a heck of a lick given the right conditions.
As long as it is harvested sustainably this sounds like a good idea. Alternatives I have seen using fungi worry me as the fungus appears live and could infect areas it is not native.
