I've got some nice recipes at home, do you fancy tea smoked duck breast? Personally on a wild duck I find that there isn't a huge amount of meat apart from the breasts. Pan fried with black pudding and muscat wine is nice (a variation on the chicken recipe)

On another note, the season ended on 31st jan, so unless it's been frozen I'd get scoffing.

It has been frozen so its not terribly urgent. I hadn't thought about taking the breast off and just using the rest for stock though that sounds promising

out of season ... but ....chantrelle stuffed .


fast roast in a hot oven , rest n serve .
a fruity wild shroom stuffing would probably work .


hoi sin /honey glaze , fast roast .

use as 1 in a game pie medley .

bbq eat messily .
