Just been reading up about blad steak, it's not that cos it's got no blade in it.

We call it 'heart meat' (Dad's family used to be butchers), not sure of the technical term for it, but it is joined to the pluck where the trachea splits into the two bronchi. Cube it & it makes a lovely tasty stew.

As far as I am aware, it forms part of the diaphragm seperating the thoracic & abdominal cavities. Presumably the size of beef cattle, as opposed to sheep or pigs, means it is worth saving as a cut. To the right of your picture looks like the opening of the oesophageal hiatus, through which the oesophagus passes to the stomach, the point at which the diaphragm must contract to stop the stomach contents being forced back out the wrong way.

Thanks to NL vs Gil on the mincing thread I've just remembered, where is the suet from? Is it the fat round the kidneys? If so how come there were'nt none on mine?

Use the Henderson brine including some bay leaves. Boil it up with 24 pepper corns and 12 cloves and juniper berries and leave to cool. Greengrocer, deli, supermarket...off a Juniper bush (or did you miss them out of your planting scheme?)
