Nearest supermarket will take 45 mins there, parking, and back. I've got to get out and do me fruit tree lines yet.

Yessum.

My brine has:
coriander
fennel
cumin
cloves
+cardomom leaves

Mexican Michelle is ringing her dad in a while for his spiced tongue recipe, so we shall have 2 different varieties to compare.

When was it slaughtered, friday? Should be OK for another day in the fridge at least. If you're planning on pate and the like then you can freeze it anyway.

Please can you post the recipe for spiced tongue? You'll have loads of time on your hands in the next week cos it's going to be
ages til you get the main beef back. Don't want you to be bored....

Livers 5 days old today, animal was slaughtered Wednesday.

Probably still fresher than buying it from a butcher (thinking about it), but I'd process it/get it in the freezer ASAP if I was you. Preferably cut into manageable chunks first.

Cheers! For the liver, there's a nice pate in the RC meat book for any liver. That would be nice if you've got time. But check on the recipe for the tongue first, of course
(HW leaves quickly, running for cover.....)

cant put humpty back together but good stock can put the flavour back (sort of )
