Most of it is still running around but as far as I know it salts well enough after being frozen, would have thought the quality wouldn't be quite as good as fresh though.

I'm scared of the concept of Jerky. I need to order some from Martin and try it.

Get it while he's still got some Dexter left Even my mum liked it & she wasn't at all keen on 'normal' jerky.

No just very simple brine mix, I'll ask him tonight how long he leaves it in for.

There is a special code: DS50, but at the moment I am having trouble with my new SSL certificate, so it will come up with 'Secure Connection Failed' when you go to checkout. You can click the link to ignore it or PM me if you prefer.

Even with an expired certificate the connection is still secure, the whole blasted certificate thing is little more than a money making scam really

Piccy

That is the standard cut:

2 shoulder joints
Minced shoulder
4 leg joints
3 belly joints
a kidney
loin as 3 joints or chops

but butchery can be specified, if required.

The head , trotters & offal are included but optional, so there are usually more than a half share available for those who do want them.
