Quail eggs, dipped in boiling water for a minute, shelled v carefully then added to the fish & sauce before covering with the cheesyy potato, if you get it right they are soft boiled when served.
Oh, and add sliced leeks to the fish & sauce.

Steps back and awaits the torrent...

leek n fish is a classic combo in pies or soups

i put hbe in my rice n fish pie so i recon your quail egg thing would be ok if a bit fiddly

ps that should be i would put etc hbe's are banned in this house
