When I used to sell at the Markets here in the West of Ireland, Lemon and Lime Marmalade was a big seller. It is very simple to make, but very fiddily, with cutting the pith and rind etc, very thin. Very tasty!

I used a bread knife, and still have all my fingers now!

Is there a version where you boil the whole fruit first, before shredding it? As in Nigella's Pink Grapefruit? That would really interest me as I find it easier to shred.

Yep, just do the same as above but boil them whole in the 2.5 litres for a couple of hours (rather than soaking) and then make up (or boil to reduce) the liquid to 1.7 litres, juicing & slicing up the fruit and then proceed as with the sugar above.

Oh, and removing all the pips and stalks from the fruit as well.

I was supposed to be doing mine yesterday, but Nat has been on a clotted cream making binge (with the big pan) so the first of my batches have just gone on the stove. Got a busy day ahead but all I want to do is sit inside smelling the jam pan. At least it's not freezing here today, for the first time in a week.

Just been out and come back in to a lovely lemon/lime smell as the pan has got going

Mine are now in jars cooling, I might be a marmalade convert from the spoon tasting!
