Just been cutting up the fruit for a mega pre-Cristmas batch and it smells sooo citrusy in here

Wonderful isn't it?

Home made marmalade has got to be one of the best cooking smells, 'though the three chutneys I had on the go here on Sunday night weren't bad either

I'm looking forward to this one- last time I didn't have enough limes so I did a lemon, lime & grapefruit one but I found the grapefruit overpowered it a bit.

Marmalade is a great one for experimenting with, I made ordinary Seville type last year but put a couple of tablespoons of molasses in it - went down really well with my Dad.

That reminds me, must take a jar over tonight.

I don't like marmalade, never tried lemon and lime though, recipe?

Chez made some of the finest marmalade I've ever had. It was lemon and lime.

No pressure.

1kg of fruit (50/50 lemons & limes in this case juiced and then sliced thinly and soaked overnight in a bowl with 2.5 litres of water. Then transfer to a preserving pan, bring to the boil and simmer for a couple of hours until the peel is tender and the liquid reduced. Stir in 2kg of sugar (demerera in orange marmalade but I prefer normal granulated with non-orange ones) until dissolved and boil rapidly until setting point, roughly 20 - 30 mins, or longer if you like a firmer set- my last one was a tad on the runny side so I might leave it a bit longer.

Nah, we ate it. Except for the jar that she gave to her mother. Even she was impressed.
