my one has a bit of sunflower oil in it.

suppose you could cut that down.

If eggs are binders in a recipe, it can be replaced with Arrowroot, Soy, Lecithin, Flaxseed Mix, Pureed Fruits or Vegetables, Silken Tofu, Unflavored Vegetarian Gelatin Powder (agar agar). The ratio is, for every egg replaced, 1/4 cup of the substitute is used.

If eggs are leavening agents, Buttermilk, Yogurt, Baking Soda, Commercial Egg Replacement Powder such as Ener-G can be used.

If eggs are moisturizers, Fruit Juice, Milk, Water or Pureed Fruit can be used.

supposedly, you can replace egg in some cakes with vinegar

Could you do something with oats and syrup adding a bit of dried fruit perhaps and bake in the oven

I tell you what (she says polishing off the first slice), this fudge cake isn't too bad!

It's very sweet and tastes a bit shop-bought (that'll be the lack of eggs and butter ), but it's not too bad at all.

I reckon it'd be nice with a bit of spice added, too.

Hot Fudge Cake

Ingredients:

1 cup flour
3/4 c sugar
6 tablespoons cocoa powder
1/4 teaspoon salt
1 tsp baking powder
1/2 cup skimmed milk
1 teaspoon vanilla
1 cup brown sugar
1 and 3/4 cup hot water

Method:

In a medium pyrex dish, combine flour, sugar, 2tbsp cocoa powder, baking powder and salt. Stir in the milk and vanilla until smooth. spread out evenly in the dish

Combine brown sugar and remaining cocoa; sprinkle over batter. Pour hot water over all; do not stir.

Bake at 180c for 35-40 minutes.

All Bran fruit loaf

Using a 1pt mug as a measure makes 2 x 2lb loaves.

Equal quantities of

All Bran
Dried fruit
SR flour
Brown sugar
Milk

Put everything except flour in a bowl, mix and leave to soak overnight. Next day add flour and put into 2 x 2lb loaf tins (if using a pt measure). Cook at 180 deg, gas 4 for approx 1 1/4 hrs.

1 10 oz SR flour
2 3 large tablespoons cocoa
3 6 oz caster sugar
4 1/2 teaspoon salt
5 1 teaspoon barcarb
6 1 dessertspoon milk (we used soya milk)
7 4 oz trex
8 1/2 pint milk
9 1/2 teaspoon vanilla
10 3 tablespoons syrup


Grease and line 8 inch cake tin.

Sift 1, 2, 3, & 4

Disolve 5 in 6

Warm 7, 10 & 8 until liquid. Allow to cool. Then add to dry ingredients together with 5, 6 & 9. Mix thoroughly and turn into cake tin.

Bake for 1- 1 1/4 hours in moderate oven. gas 4

Just came looking for this to make, and read it proparly, don't think the Trex is going to agree with me Might try the bran fruit loaf instead

Pretty sure it's eggs full stop and tbh I'm not risking anything, it's just not worth it for that pain.



When my dad had gallstones it was the fat in the yolks which he had to avoid as he virtually lived off egg white omelettes but I remember the pain he was in (he said he felt like he was being stabbed between the ribs) so not worth risking just in case

the all bran recipe is great and is a staple here

( except that it's best served sliced with butter )
