Hows it going peeps???
I walked into the co op and remembered about the challenge and walked out again.

Luckily I've not had meat today so I'm ok so far!

Well we have made a massive mixed chunky vegetable/bean/lentil soup, which I have just had a small bowl of, and it was very good. It will be the evening meal along with home made bread (care of Amipest).

We do have left over chicken, but hopefulyl the kids will finished that, so I can be squeaky clean for the week.

Had summer vegetable quiche last night with fresh new potatoes (from the garden), courgettes roastd with mushrooms, garlic and chilli. Was very nice. Unfortunately I slipped on both counts at lunchtime, today, by going to Tescos for a BLT but I'm now flogging myself thoroughly as I type. In my defence I didn't even realise that today was August 1st! Where does it all go?
Anyways, I'll endeavor to be more 'on the ball' from now on.

Well todays effort is going to be some form a vegetable ravioli, based on whatever is in the weekly veg box.

Should be interesting, as I do tend to regard home made pasta making as a bit too much like hard work So I am well out of practice.

Why not do rolled up pancakes with the veg stuffing instead? Much faster than making pasta.

Because so many things like pasta should not *always* be rejected as they are hard work, and perhaps I will be quicker today.
