Now who knew *this* was so easy to make? Recipe partly nicked from Felicity Cloake on the Graun and partly adapted from some of her commenters. Also fits into the continuing series of 1001 things to do with an egg.

Ingredients:

6 Tbsp Honey (or golden syrup or I think it'll even work with jam or chocolate)
Sploosh of lemon juice (prob 1tbsp)
150g softened butter, plus the wrapper for greasing
150g soft light brown sugar (or whatever brown sugar you've got)
Pinch of salt (the nicer the salt the better)
2 eggs, beaten
150g Wholemeal flour
1 1/2 tsp baking powder
Sploosh of Milk (1/3 to 1/2 pint?)

Method:

1. Grease a 2pt pudding basin and spoon the honey (or whatever you're using in the bottom as gloopy goodness). Stir in the lemon juice.

2. Beat butter and sugar with the pinch of salt until fluffy, then gradually beat in eggs until well mixed in. Fold in the flour then mix in enough milk until its dropping consistency. Spoon into basin on top of gloop.

3. Cover basin with a lid of greaseproof and foil, enough to be able to secure with an elastic band or string. Stick in big pan of boiling water with lid. Lower down to simmer. Leave for 2 hours (but keep checking to top up your boiling water.)

4. Run a knife round the inside of the basin and turn out onto a plate or a big bowl (make sure its a deep plate or a lipped one or the gloop goes everywhere ). Serve straight away with custard or cream. Does keep for at least a day in the fridge.

Enjoy

And if you can't wait 2 hours cover with clingfilm and microwave for about 5 mins, leave to rest for 2 mins then nuke for another 2 mins.
Normally works here......

Love the idea of a pils and lettuce diet, bottle of holsen pils, plate of lettuce followed by a great big steamed pudding.
If you want it healthy put stewed apples or berries in the bottom before the pudding mix and serve lol

I just make an all in one sponge.
Place all ingredients plus a little extra baking powder in bowl, and beat until smooth. Then nuke.

Pudding ready to eat about five mins after deciding to have one.....

I am trying it tomorrow!

The times I've forgotten about a sponge at the back of the oven, only to remember it too late.

(not at home, at work, where the oven is huge, and dark, and old.)

My Pinterest board only has quick micro puds on it. With Wesleys peanut allergy it's only way we can have a pud if I've been at work and teenage boys seem to like puddings
