i did a batch like this

1kg ripe bullace
1gn sea salt
10 gm soft brown cane sugar
5 ml cheap balsamic vinegar
5 ml good vanilla essence
a couple of grinder twists of good black pepper

marinade 24 hrs
squash with a tater masher
spread on 3 silicone sheets
dry medium hot in a dehydrator til top skins over
prise loose ( you will get it , a plastic spatula is a handy tool )
turn over , poke it back into an even thickness and tidy edges holes etc
dry medium hot til shiney

i recon the rather subtle salt sugar vinegar marinade is an important part of why this works so well


very delicious but what is perhaps best is it actually looks good as a roll or shredded like rough cut tobacco from the roll with a sharp knife. parts of it are proper "gels" with ace red/yellow colours

ps my pastels are intense and delicious but the physical form has a few stickyness issues even in a bed of icing sugar

the stuff above is much more manageable

I'm trying to work out how I'd use silicon sheets in my round dehydrator.
Also don't they impede air flow?

my one is a box with a hot fan at the back of a box so the air goes over each sheet.

in a stack type sheets wont work

I think I'll go for one like that when I upgrade. This has been a good starter

You can buy non stick PTFE sheets at Morissons. I cut them into circle with the centre missing to fit my round dehydrator. They seem to work and now stop airflow. Might be an option.

Thanks..I'll look into that. That would also cure the problem of fruit sticking.

Cornflour will help with sickiness. Icing sugar just makes it worse.

There’s a central pillar of air by design. Gaps round the edge due to poor scissormanship make it work well enough.
