THere's two in my veg box. I could make mousakka, but I haven't got any lamb mince, and I'm not due another meat delivery untill Friday. If I roast them, and then freeze them, will they be OK for mousakka when they defrost, or should I toddle off to the butchers tommorow?

Or is there anything else you can do with aubergines?

You can roast them, then puree the flesh with lemon juice, olive oil, cumin, garlic and tahina. Nice with bread, or roast or grilled lamb.

What else did you get in the veg box?

They go very well with lots of garlic and with tomatoes as well...

You could do them in a vegetarian moussaka with brown or green lentils?

Thanks a lot Deedee, that's just the kind of site I've been looking for for ages!

I've just planted out all my aubergines, tomatoes and stuff and I can hardly wait to get stuck in to some new summer veggies!

Now that's an idea - I might just chop upp whatever is left on Friday, and call it vegetable mousakka!
