I am intrigued - how does a ginger beer plant work?

Its just yeast, ground ginger & sugar. You can make you own stater easily but we have found that it takes a few brews to develop a deeper taste.

Every day you add more ginger & sugar. After a week to 10 days you then you make a strong sugar solution with some fresh lemon juice add the drained off the liquid from the plant & top up with more water. Bottle & allow to stand in a slightly warm place for a day or so & then chill.

Split the plant in two & add extra water & start again.

You used to be able to get kefir like grains for ginger beer but I have not been able to track any down.

The ginger beer plant is a bit like the, sour dough starter. But its ginger, powder or grated fresh, sugar and yeast in a halfpint of boiled cooled water in a jar covered with a muslin or fabric square, a tablespoon of ginger and sugar in everyday and then drain the jar through a filter paper and use the liquid you drain off to add to te sugar solution.
With the solids you split it in half, put half back into a jar with fresh boiled cooled water and start again. The half you split of you can make a second plant, throw away or pass on to someone else to get started.
