Someone's coming to buy some beef today and I haven't got a clue what to charge her. The beef is hereford cross and he was raised solely on grass - no chemicals, wormers or anything.

How much is reasonable? She wants joints and braising steak.

we asked the bucher that cut the meat how much they would charge for each cut and then weighed what we had, calulated each cut per their charge and then took maybe 50p off or rounded it down.

a 3 and a half lb piece of silverside went for 8
topside 4 lb piece went for 12

1 lb of braising steak for 3

shin was 2 a pound

we had no problems getting rid of the meat what so ever at those prices

Probably too late, but you could try here, for an idea of prices, and then decide how yours compares - gives you a place to start.

Thanks both. She had about 20 odd lbs of meat in the end (mixed stuff like joints, braising steak, mince and chuck) and she paid 70. I think we all got a good deal in the end and it's 70 towards the 240 we've got to pay the butcher/slaughterhouse
