1/4 pint water
finely grated rind 1 lemon
4oz butter
4oz soft brown sugar
12 oz mixed fruit ( I use just sultanas, but any mix you like will work)

8oz SR flour
1 egg


put the first 5 ingredients in a pan and bring to boil, simmer for 15 mins and then allow to cool (overnight if you like)

Stir in a lighlty beaten egg and the flour. Put in a lined 2lb loaf tin ( or your favourite round one that looks about the right size). Bake at ~150C for 90 mins. The cake is supposed to be ready when a skewer inserted in the middle comes out clean - I prefer this one a little undercooked.

Those with restraint can eat the cake simply sliced - I put butter and damson jam on it! - I have seen it eaten for breakfast sliced with a dollop of marmalade


Just calculated this to be 367 cals and 11g fat per 1/8th cake - maybe 2 slices for brekky wasn't such a good idea

I wonder if you used tea instead of water it would turn out like bara brith.

I made this yesterday using half Dove Farms gluten free SR flour mix and half ground almonds and an extra 1/2 tspn baking powder- it's just as good and wheat free as well:D
