kitchen smells of marmalade

this is my recipe:

slice 6 Seville oranges and find every single cut on your hands with the acidic juice. Painstakingly remove 5 billion seeds and tie up in a cloth. Pour 2 litres of water over oranges and leave overnight. Next day, curse that you started it, and cook for about an hour until soft. Measure (preserving pan with measurements on it very handy here) and add same volume of sugar, pre warmed. Cook *forever* until setting point, including an enthusiastic stir resulting in the bag of seeds bursting, and spending lots of time removing all the seeds again, this time from hot sugar solution. After reaching setting point, including the use of countless saucers in the freezer, and test samples of marmalade all over, let rest so the peel does not float to top of jars. Jar. notice peel has floated to top of jars. Decide it does not matter.

These days I don't bother to separate the seeds out - I cook it all up together and then skim the seeds off at the end - thereby making me let it stand long enough for the fruit to settle and not float up

Never made it before, but I tried this year. Just potted up 12 500ml jars with 1 250ml jar for the left over. I had it on toast for breakfast this morning. Very nice! I am not really a 'sweet' person, so reduced the sugar content a bit. The marmalade has a nice tart taste and is not overwhelmingly sugery. The peel floated up in the jars, so a quick shake when it was cool and it re-distributed within the jam.

12 jars, 1 a month to last me until next January.

I've just made some with tangerines that were never going to ripen, a lime because the tequila had all gone and two oranges that had seen better days. It took two days. I didn't have chance to stand over it while it boiled and I didn't want to risk burning it. Anyway it's done, it's dark and sticky and being enjoyed and the house, for a brief while smelt lovely.

Picked up a kilo for 50p yesterday so will have a play. How much marmalade will that make?

I have a stinking cold so I might not enjoy the smell.

1 used 2.5kg to make 12x500ml jars with just enough left over to fill the 250g jar.

I have a whole bunch of sevil oranges in my freezer, that desparately need using up. I need the freezer space. I also have a fruit bowl full of citrus that is't going anywhere. I think I may bite the bullet, and defrost them to do later on in the week.
No motivation really though, as I have all the B&B marmalade already that will last well into next year, and I made that last year.

Me neither, although the fruity smell coming from the kitchen at the moment is wonderful.

Finished ours last night - just cleaned the drips off the jars today. I use Cab's method and split it over several days which fits easier in to my hectic life. Kill the oranges one night. Cut the next and boil up the pips pith and juice. Strain over the shredded peel overnight/several nights, then finish off. I left out some peel from some of the oranges this time, and added in some extra lime juice, and generally guessed quantities, and it's lush!! Often there is too much peel and not enough marmalade but not so this time. And it used up the limes going off in the bottom of the fridge....
