Slightly urgent request.

Just took our regular couple of pigs to J and J farmers abattoir....... only to find that the person who offered a curing service in conjunction with the abattoir no longer does so. There is a new company offering brine cure.... but I would prefer dry cure.

So anyone know of a meat curing/smokehouse offering services in the west devon area? Or generally in the south west. For one pig only (the other stays as pork).

I've cured and smoked an odd side or two of bacon in the past - but a whole pig's worth is a bit daunting.

what nick said,whoever does alison's stuff knows what they are doing.iirc the bacon is wet cure though.

if it is for you a whole pig isnt that much more bother than a side or a leg as you need to have all the stuff out ready and scrub it afterwards anyway even if it is just a part .

i recon that i can cut,part bone and salt a pig in a couple of hours and as far as smoking goes making an improvised "tent" if the usual box is too small is also fairly easy .
