After a bit of foraging...in a local hedge and in a shop reduced department....
This makes a full maslin pan...over 10 pounds weight of chutney!

4 lb 4oz apples after preparation
2lb cranberries
1oz garlic and 3oz fresh ginger chopped fine

3lb sugar
1½ lb sultanas
1 tsp each ground ginger, mixed spice, cayenne, salt.
1 quart cider vinegar

First four ingredients plus half the vinegar, cook gently until soft and reduced a bit.
Add the rest except the remaining vinegar, cook 20 minutes , beware of it sticking and burning!
Add the remaining vinegar, cook until the required consistency is reached.

This is adapting a recipe from the HMSO book of preserving which uses 7 lb of sour apples, no cranberries 1lb of sultanas and ½ lb of crystallized ginger......
