Apple Crumble Muffins.
300 grams plain flour
2 tsp baking powder
2 tsp ground cinnamon
pinch salt
4 eggs
100 mls sunflower oil
250 gs caster sugar
2 tsp vanilla essence
1 1/2 cups of stewed apple
Topping:
50 grams of butter
75 grams plain flour
25 grams of muscavado or Demerara sugar
50 grams rolled oats
Sift flour, baking powder, cinnamon and salt into a bowl. In another bowl whisk eggs, oil, vanilla, sugar and apple, then fold in the flour, don't over mix. Put in muffin cases, sprinkle the topping on and bake for 25 mins at 170 C.
I haven't made these, but was passed the recipe. I'm going to try them with rhubarb, instead. Sort of posting as filing system. |
