Our native old field cedar, Juniperus virginiana, is dioecious. Only female trees fruit. Last year was very scarce. This year they are loaded!

I won't be making gin, thank you very much. I do use juniper as seasoning for venison. There's such a plethora of them that I'm wondering what else they might be used for.

dpack, any suggestions? Also, should I merely air dry, use dehydrator, freeze?

cold cure fish such as gravdlax or pickled herring

it might work as a finishing herb on the bbq coals for fish

a little works with fruit or in puddings, less is more for that

venison cooked or jerked it goes very well among the other spices

i dont think i have tried other ways apart from mixing pancakes and dumplings with gin which works well

I put some, along with other stock veg and herbs, in the stock pot when I boil a ham. I go on to roast the ham afterwards and use the stock to make ham and split pea soup.

To keep them for more than a few days - do you just air dry the juniper berries, or use a dehydrator, or freeze them?

unless it is hot dry and sunny the dehydrator is a very good idea with berries

not done juniper, but it works a treat for sea buckthorn, blackcurrants and suchlike small berries

dried they can be used whole in a marinade or ground to use without lumps more rapidly
