I am sure that someone here must know, but how do you add some more pages to a pdf?

I'm sure there used to be an easy way, like setting the pdf printer to append to an existing document, but I can't find a relevant option anywhere.

There are various online tools that can stick two pdfs together, but I ought not to have to go online to do it.
Or if I do, then any recommendations on which one to use?

Anyone with a Mac can do it with Preview.

I'm not sure if the Firefox PDF viewer has added that functionality yet

You can do it with the paid version of PDF Exchange, not sure if they let you do it with the trial version
