This may be a stupid question but our old boiler is currently working fine but we have been told conflicting advice as to whether we need to have a new boiler to cope with the additional radiators when we have the extension

Is there a way I can work out the capacity of a boiler?

The short answer to that is No - I am at home today so have just run upstairs to see if there is anything written on it and there isn't

If, when you get home from work you find that your slippers are not neatly placed in front of the fire and ready for you and your gin & tonic is not quite up to sctratch, then it is probably time to get rid of the old boiler and get a new one.

The boiler output "to water" will be on a label inside the case.
It may be in BTU or kw.

That's easy.
The tricky thing is calculating the load from your existing radiators, which depends on their size, number of panels, extra 'convector' finning...
It'd be sensible to check the size of the pipes (which can limit the amount of heat you can get away from the boiler before the flowrate gets so fast that you can hear turbulence).

If your boiler is a condenser, there's no harm in running too many radiators- they just won't get so terribly hot and you might be a little short of total heat on very cold nights.
However, if its NOT a condenser, and it can't run hot enough it could damage itself with corrosion from condensation ...

If you know the name of your boiler you can often google it and get a page of tech stats that will list everything for you.
