Coriander seed, as a spice, is really cheap. Go to one of the places where you can by a big jar or weigh it out yourself, and it's dirt cheap.
As a spice it's great, but it also makes a great sprouting seed; soak overnight and then sprout it as you would for any bean or seed. The young plants pop neatly out of the seed cases, and make a great garnish or addition to a salad. This is also a great way to get coriander plants going - save some of the seedlings, lay them on top of a pot of compost and they'll do fine.
Do this once a fortnight to once every three weeks for a steady supply.

Haven't tried cumin. Fennel works, but I normally find that it's a more fussy one to germinate (so you get less of a 'crop' at any one time).
Works wonderfully with sunflowers; the shelled ones you buy to eat, as long as they're not salted or roasted. The seedlings you don't eat can be grown on for huge sunflowers
