marinaded and hot smoked is tolerable long term .
can you do better ?

in 24 days im going to need trout recipes
i did not fish a half mile last year (few do cos dangeroos wading is required ) and im hoping for a few monsters in the sustainable take

Crunchy trout guijons with horseradish;

fillet and pinbone the trout (I usually take the skin off too)
Cut diagonal slices about 1cm width
Coat with flour (plenty of salt, white pepper and black pepper in the flour)
Dip floured strips into beaten eggs
chuck these into a bowlful of dry breadcrumbs, jumbo oats and sesame seeds.
repeat the egg and breadcrumb mixture steps to make sure you've got a good thick crunchy coating.

Deep fry for a few mins in hot oil.
Drain on absorbent paper.

Open a 300ml tub of full-fat creme fraiche
Grate and stir in some fresh horseradish - keep checking til you get the heat where you like it. add a handfull of chopped chives and a bit of lemon juice. Stir until it looks all nice and green-flecked.

Serve with salad.
