Deedee, have you ever been to the farmers market at Wallington (in the town hall grounds, opposite Sainsbury) - there's a game seller there from which you can buy venison, they have lots of different size pieces so you could get just a small bit to try first time.

Have gone mad and ordered the "dryer". It does seem a lot better than a homemade one would be, unless a lot of work was put in.

Have joined the Cotswold Foraging club, so should be handy for the mushrooms at the very least.

Jema I think you will be pleasantly surprised as I was at the quality of it and how much it holds for the price I cant believe I nearly shelled out hundreds for one

Building one, was on my "todo" list, but just looking at the picture, the rack system seems impressive and capacious.

Venison makes the best biltong. A very, very easy thing to make.

"Need" is always debatable as you can improvise. But Biltong is dried whereas jerky is hot smoked. My last Jerky was very good

I don't mean need as in must be used but more 'if we had one could it be used?'. We have plenty of fruit (raspberries, apples, fat chickens etc) that could be used. We also managed to gather a good number of ceps & other shrooms last year.

does ithave fan built in or is it just a matter of opening or closing a vent?

it mentions that it has 2 height levels for different size fruit, how does that work?

how many trays does it have with it?

(oops, missed this first time)

I've made it in a dehydrator. I've also made it in the airing cupboard. Take your pick. But unless you've got a big, airy airing cupboard that is reliably warm (ours has a little heater in it, rather than being a water tank cupboard) then you're probably better off in a dehydrator.

If you're patient, you can also do it in a really low oven, or you can build a 'biltong box'.
