The beer is local, real ale and others from micro and local breweries, likewise the cider; bottled local "country"/fruit wines; organic fruit juices and soft drinks.
Food is all seasonal, local, organic where possible, from small producers, menu changing daily; good vegetarian and vegan selections; Fair Trade where possible.
Prices to reflect quality.
Entertainment - skittle alley with stage for local bands, musicians and entertainers of all sorts, doubles as function room for parties, beer festivals, etc. Occasional local music live in the bar at weekends.
Beer garden outside, used for outside functions in summer; organic herb garden to serve kitchen, wildlife borders, native trees and flowers.; veg and fruit grown/greenhouse/polytunnel if room.
Newsletters to locals to tell them of events in pub; internet access/DVD library etc according to local wishes.
Local staff employed.
All cleaning materials and supplies as environmentally sound as possible; possible use of solar panels, and switch to green electricity supplier.
All sorts of local customs and festivals observed, plus solstices, etc, local Morris side, etc.
Small discount on food if you walk/cycle/horse etc to the pub.
Some sort of green-inspired loyalty scheme possibly.
If room, good quality B&B.

Yes - if it was near enough to be a short yomp...

Actually sounds like my dream pub... the sort I'd want to run. (but DP not so keen on the idea... oh well, am going to do the licenses anyway )

Brits being Brits, you'll get a few who'll pop their bikes on the back of their 4x4s and cycle a quarter of a mile in order to claim the discount - ooh, sorry, that's soooo cynical .

Sounds lovely, though very niche-market. Can mine have a thatched roof please?
