What does it mean exactly when the ingredients list states "whole egg" (it was on the side of some organic salad cream)? Sorry if this is basic but I don't know and I think I ought to.

That would make sense but technically that runny wet egg stuff is the yolk and the white isn't it? edited to say - no smart comments, you know what I mean

yup whole egg is everything within the shell, not just whites or yolk!
