Ingredients
175g sugar
175g butter
175g Self Raising flour
3 eggs, beaten
2 lemons
25g sugar
Recipe
Cream butter and sugar until pale in colour.
Add the eggs a little at a time.
Fold in the flour.
Add the juice of 1/2 lemon, and 1 lemon's worth of zest.
Bake in a small loaf tin (or any other size tin really - it doesn't much matter) at 180 deg C for about 40 - 45 mins.
Mix the remaining lemon juice and zest with the 25g sugar.
Pour it all over the cake while it still hot, and let it cool in the tin. Serve with tea etc etc etc.

This is also nice with leftover seville oranges, if you have any, and would probably work with marmalde too (if you thinned it down a bit) In fact, its such a basic cake, it probably works with anything a bit tangy!
I have also replaced the lemon with 25g of cocoa and 100g of melted chocolate and drizzled it with coffe leuqueur instead. Reduce the cooking time a bit for this version, as it\'s much nicer if its very moist and a just a bit squidgy.
