Egg Free Choc Cake (as eaten by new forest pony)

1 10 oz SR flour
2 3 large tablespoons cocoa
3 6 oz caster sugar
4 1/2 teaspoon salt
5 1 teaspoon barcarb
6 1 dessertspoon milk (we used soya milk)
7 4 oz trex
8 1/2 pint milk
9 1/2 teaspoon vanilla
10 3 tablespoons syrup


Grease and line 8 inch cake tin.

Sift 1, 2, 3, & 4

Disolve 5 in 6

Warm 7, 10 & 8 until liquid. Allow to cool. Then add to dry ingredients together with 5, 6 & 9. Mix thoroughly and turn into cake tin.

Bake for 1- 1 1/4 hours in moderate oven. gas 4

Pretty sure it's eggs full stop and tbh I'm not risking anything, it's just not worth it for that pain.



When my dad had gallstones it was the fat in the yolks which he had to avoid as he virtually lived off egg white omelettes but I remember the pain he was in (he said he felt like he was being stabbed between the ribs) so not worth risking just in case

the all bran recipe is great and is a staple here

( except that it's best served sliced with butter )

Going to try a Blueberry Oatmeal Cake, will post recipe if it's any good (*I might have a thing about blueberries)

What about a fruit teal loaf?

Make as for white dough but add some mixed fruit & / or nuts (whatever takes your fancy). Soak any vine fruit in tea (or hot water) for a while first. Cherries, mixed peel & nuts don't like being soaked.

Add some sugar as well if you like.

I use the soaking liquid in the loaf but that might not be to everyone's taste.

[If you add butter & eggs it makes it more cakey, but you don't have to - if you don't it won't keep all that long, but it's still a sweet treat]

Don't knead it so much that you squash all the fruit, but give it a good go.

I'm not good at writing down what I did last time, I usually cook by 'feel' so feel free to adapt!

found this the other day...I haven't tried it but it looks intriguing...how can it possibly work?....

Pineapple Cake
1 cup sugar
2 cups self raising flour
1 tin crushed pineapple 450g

Preheat oven to 180 degrees. Mix all ingredients together and pour into a non-stick can tin. Bake in oven for 30 minutes. Allow to cool and top with strawberries.
Cups are always a swine but I think its about 8oz to a cup...whatever that is in metric

This recipe is a frugal one essentially, but fits the egg and fat free hat so here goes:

1 cup hot strong tea (no milk)
1 cup dried fruit, any you have available
up to 1 cup sugar (I use half a cup and thats way sweet enuff for me)
1 and 3/4 cups self raising flour
Spices eg cinnamon, nutmeg, I used mixed spice, about 1tsp - can be left out if you prefer its just as nice

Use any size cup as long as its the same one used for all ingredients

Put sugar & spices in a bowl and add hot tea, stir till sugar dissolved, add fruit and soak in the tea for a minimum of an hour.

Add flour to tea & fruit, mix till smooth, pour into a greased 1lb loaf tin and cook in a moderate (170 degreesish) oven for about 45 minutes or a skewer comes out clean.

Voila, frugal easypeasy eggandfatless cake
