I would put them in a box with holes for three weeks with flour (for purging) and thyme (for flavor). Wash them in vinegared water to clean them and make them salivate. After that they are ready.

Garlic and butter is ok. But I prefer with ground pork, ham, tomato sauce, white wine, garlic and and hot pepper.

Is that to take away the taste of snails? My favourite method is to boil them in water for 30 mins, throw away the water and then throw away the snails.

I've tried a few times and should try again to find a way to eat them, there's some old threads on here with more details.

Bois, isn't your garden overwhelmed by them? When it's wet a quick walk around the garden is all that's needed to collect plenty. A sheet of wood or plastic, some upturned pots etc should have plenty lurking underneath after a few days.

WHat's your favourite crop? Plant several rows of it, and keep weed free until it's almost ready to harvest. Just before you wish to pick it, it'll be covered in snails. Works for me. Sadly.

haha! I've found that to be the best way too!

Right - I'll start the harvesting / purging process this week and let you know how I get on!

we would purge them for a week and once salted/cooked- chop them and mix with butter/herbs etc and re-stuff the shells. You can make big batches and freeze them for roasting at a later date. Really quite tasty, although I find the smell a little off putting when they're first boiled.

Slugs! Now there's a thought. Think I'll see how I get on with the snails first - but hey, I'll try anything once.

That looks like a Roman snail, I'd be interested to hear if they taste any different or have a different texture to the normal garden snails. Sadly you can't collect Roman snails from the wild in the UK for some strange reason.

I remember Gordon Ramsey doing it. He put them in a big jar with carrotts and said once they start pooing carrot, they are good to go.

The Roman ones look like the ones we have kicking around our garden.

Many years ago I decided to eat some of the enormous crop of large wall snails my garden was producing. Read up all about it from some old books (they hadn't invented the Internet then or if they had they hadn't invented home computers)

Caught my snails imprisoned them under an upturned clay flowerpot in a cool damp place and fed them on the outside leaves form the garden cabbages. Cleaned them out regularly (messy little blighters) and after 2 weeks they had almost become pets

Couldn't bring myself to do the deed, and let them go in the garden again

Haven't tried it since

PS have tried feeding them to pigs, who greedily gobbled up the first lot and never touched another one after

I think pigs will pretty well try eating anything (well at least once) they certainly have a go at my wellingtons given a chance, and I would think there is more nutrition in a snail (ah! well maybe not, my wellies can get pretty meaty )
