At our allotment we have 7 chickens and regulary put rat poison down but the rat poison keeps disappearing. Can rats become immune to different types of poison? or do we have so many rats around the allotment that small amounts of poison has little effect?

Rats certainly can build up resistance to poison.

You may be killing rats but they may be dying out of sight.
Rats may be repopulating faster than you can kill them.
They may be removing and stashing the bait somewhere out of sight so the fact that bait is going doesn't mean that bait is being eaten.
and yes rat populations can build up an immunity to poisons.

Traps are a better option. Vermin tends not to build up an immunity to that.

Are you feeding layers pellets to the hens? I don't know if this is true, but I have heard that if the rats are stealing the hens pellets, the vitamin K in the pellets will give them some immunity to certain types of poison. If the rats have a food source it is very difficult to keep them away - easier to make sure they have no access to food and encourage them to move elsewhere.
