My father is coming to visit later on this year. He is diabeteic but his weak point is cakes, biscuits, muffins and basically anything that is bad for him. The last time he visited, I bought some diabetic cookbooks for some baking inspiration but I ended up sending them back with him in the hope my sisters would do a bit of baking for him, so either I buy a whole lot of recipe books.... again, or perhaps some people on here might have some recipes. I'd prefer to get recipes that have obviously been tried and tested because I must admit some of the ones from the books tended to be a bit dry and bland.

Does he have type 1 or type 2 diabetes?

What you need to remember is that it isn't only "sugar" that will cause rises in blood sugar, but also carbohydrates. On the whole though if you aim for more complex sugars by sweetening things using fruit rather than the white stuff out of the bag, they will be absorbed more slowly by the body and cause less of a sugar spike.

Is getting your father to run round the block to work off the cake an option? It works for my son (Type 1) but he is only 12!

Type 2.

I'm good at managing the normal food side. We tend to go for the low GI carbs to avoid the sugar spikes. His sugar levels are pretty good when he stays with me but I know he craves some of the other goodies!

My father is pretty much allergic to exercise or so he would have one believe, one of the reasons his health is so poorly!

Does he manage it by diet or medication?

He has recently started medication mainly because he is hopeless at managing it through diet and exercise. The doctor had hoped he could do it without medication. Unfortunately, with me being on the other side of the world, it does not help and mys sisters taking him for coffee and cake... need I say more?

Mine is totally under control with the medication and moderate exercise (some of which I must do in a minute). All readings back down to within the normal range, and that's with eating a modest amount of cake when necessary. I'd say have nice cake, but less of it, and take a pill when you do.

Will scones do?
I found this one on the back of a Scots porridge oats packet. It works fine for me.
I'm Type 2 - diagnosed almost 2 years ago at the age of 65 (female) and I am diet controlled - have lost 1 stone in weight - same diet and exercise as previously, but smaller portions of food - have kept the same weight for last 18 months and am in fact now slightly underweight for my height.
Recipe - 125 g. S/R flour - 50 g. olive oil marg. - 1 teasp. baking powder (crumbed together) & 1 teasp. of either powdered ginger or cinammon - 6 desert-sp. powder sweetener - 175 g. porridge oats and 50 g. dried fruit, all mixed in - then 150 ml. unsweetened yoghurt and 1 egg whipped together and mixed into the dry ingredients. Pat flat with your hands (I try for a rough rectangle) about three quarters of an inch thick - into about 12 pieces.
Cook gas 200 - for about 10 to 12 minutes. I figure the dried fruit is the only really naughty in this recipe!!

That will do nicely! He loves scones! I'll make a high fruit and low sugar jam to go with it. Thanks.
