We first had this in a pub on holiday and managed to work out how to do it. Portion for portion it makes a very ecomomical posh dish thats well worth doing for company.


Stage one:
one belly of lamb
unroll it, season it to taste, slow roast it flat- you could do this when doing something else in the oven then freeze it at this stage for later use.

Stage two:
Allow lamb to go cold (or defrost), split lengthwise into as many thin sheets of lamb as it will go, it should peel apart relatively easily.

Trim off any excess fat.

Slice into pieces about an inch by 2 inches.

Dip into egg and breadcrumb (we used crushed up rye crispbreads which gave a nice dark crunchy coating)

Deep fry until dark golden brown.

Very yummy with a posh salad or with fancy dips, chutneys etc.

i have 4 breast's of goat in the freezer just calling out for a recipe with a difference i think i will try this one
