General feeling is that you'd be hard pressed to hurt it.

specifically seeking confirmation that flowers and fruit come on *last* year's wood. (Nanny and I both suspect so...)
While I still have him on my lap, Bob says "it is important to dominate elder" and "prune back hard" in autumn. Nothing specific about fruiting on new or old wood but I would think he would mention it if such pruning was likely to harm your crop.
So, I gather the best thing to do is give it an appropriate name and set about it with something sharp.
