the amounts are rough but the result is nice

some cold butter, nice stuff is good
some buckwheat flour
some good soft plain wheat flour
salt and pepper and thyme seem to work

chop and mix very gently, add vodka
mix very gently using more vodka or flour as required
chill

roll out using plain flour

blind bake worked for a quiche base, i have no idea if it would do a pasty

Vodka also makes great batter.

when i had the cold half the next day the pastry was strong enough for a large pocket pasty even though it was thinner than i would use with "traditional" pasty pastry

i will have to experiment, maybe a next gen recipe is a good idea.

I can see the benefit of vodka in batter. Why would you put it in pastry?

ETA! AHA. It prevents the formation of gluten, so your pastry will remain very short and crumbly. Nice.

yep, very short and crispy but mechanically strong

i will report back after trying it for pasties.
