Thanks for your kind words peeps

For the past few days I've been decorating (royal icing) a 90th birthday cake (for perlogalisms mum)

Just got the ribbon to add to the cake drum, leave it to dry overnight/tomorrow and get it boxed up for collection.

Oh and 6 jars of damson, tomato, apple chutney.

9 cockerels in the freezer = lots of future meals, lower feed bills and less work looking after them!

a pretty satisfactory weekend all in all.....

Ooh, also it is our 23rd wedding anniversary tomorrow too!

That reminds me: Sally: I've boiled a couple of bones. There's nothing left on them, including the plates at either end. Is it a small saw next? I'm wanting to make a gadget for poking eyelets in cloth. Bodkin?

My second attempt at sour dough, quite pleased with it though a little too dense.

Thanks for the welcome.

It is Hobz malti, maltese bread which I have fond memories of holidays as a child, it is simply the most divine bread in the whole wide world.

The recipe is adapted from one I found elsewhere and converted to sour dough.

Anyway the recipe is this

White Bread Flour 407g
Starter (100% Hydration) 406g
Water 84ml
Milk 75ml
olive oil 3tsp
Salt 2 tsp

This should make 1000g.

BAsically all the ingredients except the salt were added and thoroughly mixed. Left for 20 mins then the salt added and kneaded for 10-15 minutes (I think this is where I went wrong I think perhaps I should have stretched and folded and for a lot longer as I didn't get a window pane when i stretched it out. It was then left for 6 hrs again this probably needed to be longer. I then just shaped it and placed it on a preheated baking tray ( I need a stone) and baked at 250c with steam for about 50 minutes.

Enjoy (I certainly did)
